  • 1 cup canned chickpeas (drained & rinsed)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • ¼ red onion, finely chopped
  • ½ cup fresh parsley, chopped
  • ¼ cup crumbled feta (optional)
  • Salt & pepper to taste
